Culture
The wine is made from vines which are being converted to
organic farming, under the control of the organic
label "Qualité France". Within the perspective of the
most natural cultivation possible and respecting
nature, no synthetic chemical is used.
Vinification
The harvesting is manual, the grapes are destalked and lightly crushed. After skin maceration, the grapes are pressed, racked and run into barrels to ferment. The wine is aged on its fine lees (with lees stirring) for 8 months.
This "Jadis" wine expresses our desire to
produce, in the deep respect of tradition, a well bred
white wine full of finesse and complexity.
Tasting notes
The wine shows aromas of fresh citrus fruit. The finish is rich with good length. It will go wonderfully well with refined starter such as fish or white meat, but will also be appreciated as an aperitif.
