Culture
The wine is made from vines which are being converted to
organic farming, under the control of the organic
label "Qualité France". Within the perspective of the
most natural cultivation possible and respecting
nature, no synthetic chemical is used.
Vinification
The harvest is carried out by hand. The grapes are destalked and lightly crushed.
After skin maceration, the grapes are pressed, racked and run into steel
vats or barrels to ferment. After this stage the wine is fined, racked
and filtered before being bottled. The wine is aged on its fine lees (with lees stirring) for 6 months.
This "Jadis" wine expresses our desire to
produce, in the deep respect of tradition, a well bred
rosé wine full of finesse and complexity.
Tasting notes
This rosé marked by the subtle use of wood, develops aromas of peach and
red fruit supported by vanilla. This wine with hints
of grapefruit will be perfect with a "Provencal Caillette"
(kind of meatball) or a shoulder of lamb with rosemary.
