Culture
The wine is made from vines which are being converted to
organic farming, under the control of the organic
label "Qualité France". Within the perspective of the
most natural cultivation possible and respecting
nature, no synthetic chemical is used.
Vinification
Harvesting is carried out by hand, whole bunches of grapes from
two hundred year old plots, co-planted with three varieties
of vine are vinified in small vats. The fermenting must
is manually mixed daily in order to obtain all the finesse
of the tannins.
This "Jadis" wine expresses our desire to produce, in the deep respect
of tradition, a well bred red wine full of finesse and complexity.
Tasting notes
When tasted, red "Jadis" shows a subtle balance between fruit and spice. Very smooth in the mouth, its texture is silky and of great finesse. It is a wine which is simultaneously rich and powerful, yet full of gentleness and elegance. To drink, for example, with preserved quail cooked with black olives.
